Over the past few weeks I’ve started food prepping for baby’s arrival because I know the last thing I’ll want to think about when she’s here is what to make for dinner. I keep it simple—I make (or double) standard food portions and freeze/label the leftovers with the date food was prepped. That way, we have some healthy options for exhausted nights—things like chilis, soups, stews, lasagnas, etc.
I’m also starting to food prep lunches so that both of us have healthy dishes to bring to work. Since I work from home, this eliminates scouring the fridge and coming up empty and uninspired, and it helps Bryan save a few bucks at Dunkin’ or Panera or wherever he goes with his work husband to forage for food. It’s a win-win. Last night I made this Mediterranean Quinoa Salad recipe (check out that post—she has quinoa 5 ways!) but added some olive oil and tomatoes because it seemed like the right thing to do. Just one cup of quinoa, and we’ll both have lunch for at least two days.
I recently found out about Zoku 11-pc Neat Stack, cute nesting food storage containers that help eliminate cabinet clutter. If your kitchen (like mine!) is on the smaller side, nesting containers are where it’s at.
